Crunch Time Salad

Ingredients

3 cups mixed greens

2 slices smoked deli turkey slices chopped

1/2 small granny smith apple chopped

2 tablespoons grated carrot

1 tablespoon diced pecans

1 1/2 tablespoons craisins (dried sweetened cranberries)

1 tablespoon blue cheese crumbles


FOR DRESSING:

1 1/2 teaspoons olive oil

1 tablespoon balsamic vinegar

1. Mix all salad ingredients in large bowl.

2. Mix dressing ingredients in small bowl with a fork.

3. Drizzle dressing on salad mixture and toss.

Salads usually fall into one of two extremes. They're either skimpier than a Brazilian bikini-meaning they fail to fill you up, provide nutrients, or leave you anywhere near satisfied-or they have so much potato salad, blue cheese, and bacon bits piled on that you'd be better off taking a bite out of a cow.
